Not Your Average Brown Bag Lunch: Chicken, Broccoli, and Sweet Potato


This entire meal is only 239 calories. It's is also beautiful and will make your plate the envy of the office. It is also completely microwavable!

Ingredients:
4oz chicken breast from your crock pot chicken batch
1 cup broccoli
4 oz diced sweet potato
salt and pepper to taste

Prep:

Place all ingredients in a Tupperware and throw in the fridge. Make as many as you like for your food prep desires.

When ready to eat:

Separate out the chicken and broccoli and keep the sweet potato in the Tupperware with a splash of water and microwave 10 minutes with the lid on loosely so the steam can escape. With 4 minutes remaining, add the broccoli. With 1.5 minutes left, add the chicken back in.


You can also speed up your lunch reheating by microwave steaming the sweet potatoes ahead of time. I keep the broccoli fresh or frozen because it steams to perfection in the two to three minutes it takes to reheat the chicken and sweet potato.
