Easiest Crock Pot Chicken Tacos
This is probably the easiest meal prep I have. And yet, the chicken comes out so good I can eat it all week without getting sick of it. Thus, this is super easy meal prep! The best thing about this staple is that you can always keep the chicken in the freezer and salsa in the pantry. Everything has a pretty long shelf life, so you'll always have it on hand.
Ingredients:
One bag Kirkland frozen chicken breasts
One jar Kirkland brand medium salsa
That's literally it. I should call this Costco shredded chicken! Not to be confused with their amazing rotisserie chicken.
Prep:
Run warm water over the chicken breasts to loosen up the plastic wrap. Cut off wrapper. Toss in crock pot. Once all chicken is added, add one half jar salsa. Cook on low until thickest chicken breast reaches 165 degrees internal temperature. I just set it on low for 12 hours so I don't have to think about it.
Once done, shred chicken and place in a Tupperware. Voila! Shredded chicken for tacos for the week.
For the tacos, I place about 2 oz shredded chicken on a corn tortilla with some shredded sharp cheddar cheese and microwave for about 1-2 minutes. This softens the tortillas and melts the cheese while reheating the meat. Then I spoon on the salsa and eat. You can also add shredded lettuce and other toppings, but this is as simple as it gets. Healthy and delicious!
