Nearly No Prep Crock Pot Roast
It's fall and my grocery store had a big meat sale. That means I bought a bunch of proteins I don't normally buy, like chuck. Luckily, pot roast in a crock pot is seriously the easiest thing to make!
A lot of people will go through the effort of browning the meat and onions and what not. I've done that. By the time I'm finished, I wonder why the meal isn't just ready yet and why I have so many dishes to clean.
So, I decided to try just throwing everything in the crock pot and well, it was delicious!
As I've posted before, I love my programmable crock pot by Cuisinart. You can buy whichever one you want, but I've been using this crock pot for about 7 years and love it. You can get one at Amazon here:
Ingredients:
Chuck Roast: about 4 pounds
4 carrots (or small bag of baby carrots)
3 celery stalks
1 onion
1 bag mini potatoes
red wine - about 1 cup - make sure it is wine you would drink.
1 can beef broth
Coarse salt
fresh ground pepper
fresh thyme (or other herb such as rosemary or sage)
Prep:
Empty the bag of mini potatoes into the crock pot. Score the layer of the fat on the chuck and rub with salt and pepper. Place in crock pot over the potatoes fat side up. Quarter the onion and sprinkle around the chuck roast. Coarsely chop the carrots and sprinkle around the roast. Dice the celery stalks and sprinkle around the roast. Pour in broth and wine. Place fresh herbs on top for easy removal when done cooking. Cover and cook on low for 6-8 hours.
Serve:
When done, toss herbs and remove roast from crock pot. Spoon out veggies with a slotted spoon and put into a serving dish or plate. Reserve beef ju. Slice beef and lay over veggies and spoon on ju. Serve with warmed garlic bread to soak up that yummy ju! Feel free to trim off the fat at this point.
Tada! Ultra tender and flavorful roast beef with nearly no prep! Store leftovers in one big tupperware so that the flavors can continue to meld into the next day.
